Pasta Primavera with Harvest Marinara (for 2)
Jay's meatless adaptation of this Italian spring classic calls for a vegetable-laden red sauce of tomatoes, mushrooms, onions, carrots, kale, summer squash,red bell peppers, and garlic. Jay's summer primavera is served with penne and topped with Mozzarella cheese. As Nana might say (while pinching both cheeks) "Bellissima!".
