Roasted Vegetable and Leek Chowder (for 2)
Roasting vegetables in a convection oven is a way to intensify the flavor without adding a lot of fat or salt. For this wintry chowder we roast leeks, onions, garlic, yellow squash, celery, and bell peppers and then add to a simmering vegetable broth along with potatoes, kale, parsely, dill, a hint of cream and simmer all to perfection. #vegetarian #glutenfree #plantpower
