Ribollita (Tuscan Vegetable Soup) with Ciabatti Croutons (for 2)
Ribollita is a hearty Tuscan soup filled with stewed tomatoes, carrots, onions, celery, zucchini, kale, peppers, eggplant, and garlic - and is served over ciabbatti croutons (the bread is submerged in the soup). Before serving sprinkle liberal amounts of Parmesan cheese over the top. #totallyvegetarian #vegan
