Channa Masala - chick peas cooked in a highly seasoned curry stew with onion, garlic, cumin, coriander, and turmeric - is a vegetarian staple rooted in Indian cuisine. To make this a hearty meal, Jay adds cauliflower, spinach, potatoes, carrots, tomatoes, and assorted veggies and serves the simmering stew over a bowl of fragrant basmati rice pilaf (made with red peppers, onion).
