Jay's Summer Blueberry Whole Grain Pancakes (for 4)
You haven't lived until you've tried Jay's whole grain pancakes -- at least that's what he's been telling his kids every Sunday for the past FIFTEEN YEARS. His original recipe calls for whole wheat flour, corn meal, sugar, eggs, almond milk, whole milk, salt, baking powder, and every week he adds a wild card ingredient; this week its summer blueberries.
Pancakes can be easily microwaved for a perfect 4th of July breakfast. Add your own maple syrup or agave and you are good to go!
