Pasta with Marcella Hazan's Bolognese Sauce (for 2)
Marcella Hazan was an Italian cookbook author who changed the way Americans cook - the 'Julia Child' of Italy. Her classic Bolognese sauce calls for simmering lean ground beef (we use Angus beef) with plum tomatoes, onions, carrots, celery, peppers, and garlic. Milk and wine are added and the sauce cooks slowly over a low simmer, reducing while intensifying the flavors. Once the pasta is sauced, shredded mozzarella is goes over the top at the finish.
