THE STORY BEHIND THE RECIPE: One of Jay Solomon's first restaurants was a Caribbean eatery (in Ithaca, NY) featuring authentic island cuisine. Serving Caribbean classics like jerk chicken, pumpkin soup, plantains, and peas 'n rice, the restaurant inspired "A Taste of the Tropics" which stayed in print for 22 years (and Jay's recipes continue to resurface on hundreds of food blogs throughout the internet.)
Seafood Cioppino (Fisherman's Stew) for 2
Cioppino (fisherman's stew) dates back to the 19th century when Italian immigrants in San Francisco turned the catch of the day into a one pot meal with red wine, tomatoes, and fresh herbs and swabbed the bowl with sourdough bread. Jay's version calls for scallops, shrimp, wine, clams, stewed tomatoes, potatoes, onion, garlic, celery, and herbs.
